The golden rule of Japanese cooking is that the food should look as beautiful as it tastes. The food must be extremely fresh and it must look beautiful when served. The preparation, serving and eating of Japanese food is much more than simply a means of satisfying hunger. It is an essential part of the Japanese culture; including tradition, religion and history. Japanese cooking differs greatly from western cooking where we tend to blend the flavours. The Japanese prefer to retain the individual taste and flavour of an element in a dish, cooking each ingredient separately.
